The old-vine fruit comes from Kimmeridgian limestone — a specific geological formation packed with fossilized marine life — and you can taste the difference: there's a saline, almost oyster-shell quality underneath the green apple and lemon zest that no other white wine region quite replicates. Unoaked, as it should be. The mineral structure does the work that oak would only obscure.
