Tasting Counter was a dazzling culinary experience nestled in the heart of Somerville that was dedicated to using local ingredients, often grown in their own garden. It was one of Bob’s favorite restaurants before they had to close unexpectedly due to a disagreement with their landlord.

To honor their commitment to culinary excellence, we decided to bring in some of our favorite pantry staples from them before they closed for good.

Since opening its doors in July 2015, Tasting Counter has dedicated itself to creating award-winning multi-course tasting menus utilizing impeccably sourced New England ingredients and influenced by culinary techniques and traditions from around the world. Reflecting the restaurant’s mantra of 0 carbon | 50 local | 100 natural, TC Market sauces, vinegar, and preserves are made using ingredients from local farms and preserved at the height of the season to be enjoyed throughout the year.


A two-step process is required to create this Japanese-inspired preserve. First, green strawberries are fermented in the style of "umeboshi”. One year later, fresh local red strawberries are combined with fermented green strawberries and red shiso.
