Rancho Gordo Alubia Blanca Beans
Often called the creamy and dreamy bean of Rancho Gordo, the Alubia Blanca is a perfect fit in almost any kitchen, versatile enough to belong in quick cooking dishes and stand out in slow cooking marathons.
We’re particularly fond of cooking these beans in the Tuscan style with some pancetta, but they’re equally delightful on crusty bread with a drizzle of olive oil and freshly grated Pecorino Romano.

Steve Sando was deeply disappointed when he went to pick a tomato at a super market in the midst of August and saw it came from a hot house in Holland. Being in the heart of Napa, Sando took it upon himself to grow his own tomatoes, but that quickly turned into an obsession with a more magical fruit. Today, Steve is always on the hunt for another rare bean varietal, and his close relationships with farmers have landed him on the tables of the French Laundry and an ever growing - and adoring - bean fan club.
