Conservas de Cambados Small Scallops in Galician Sauce

Known as Pilgrim Scallops due to their shells marking the Camino de Santiago, these scallops (or zamburiñas) are found throughout Galicia. Unlike the scallops found here in the US these are purged of any sand but the ‘frill’ is left attached to the abductor and lends a sweetness and depth.
