Il Censo Bi-Ce-Mu Olive Oil

This well balanced and unfiltered blend comes from the olive groves tucked amongst the vineyards at Il Censo in Bivona, Sicily.

Unfilitered, this olive oil gets its name from the three olive varieties in its blend. Biancolilla olive contributes body and a delicate fruit flavor while the Ceresuola lends spice and distinct olive aromatics mixed with notes of almond and hay. The Murtiddara olive is truly rare and almost extinct, but when cultivated successfully, lends complexity and depth with elements of ripe pear, cut grass and green tomatoes
