Romero from Queso Manchego Pasamontes is a excellent addition to any cheese board, taking a traditional Manchego recipe and adding the harmonious flavor of rosemary leaves on the rind, before it’s aged for an additional 6 months. The rosemary perfectly balances out the nutty and rich sheepy flavors of the cheese and after trying it for yourself, it’s hard to resist going back.

Pasamontes has been family owned and operated since the late 19th century, and is currently headed by 5th generation cheesemaker María Dolores Pérez-Guzmán Palomares, who still makes it the same way as her great grandmother did.
