Every spring the maple trees on Spring Brook Farm are tapped and the the spring sap is harvested, brought to the sugar house and boiled down until its thick (aka maple syrup) and then while its still hot, it gets whipped/whisked until its not so much a syrup but a cream.
Use it like you would maple syrup or a jam, we love pairing it with cheddar and blue cheeses.
