This very sturdy extra aged Jack was a byproduct of the Gold Rush (wheels of Jack were sent to the gold fields but took time to get there and were a hit with the prospectors) and perfected in WWII when Jack was aged out even further to by dry and crystalline as a replacement for Parm (which we couldn't get because Italy was an Axis Power). But don't be afraid to eat it by itself, it is darn tasty especially with fresh strawberries or an aged balsamic
