This delicate fresh chevre is smoked over hickory and alder and is then wrapped in maple leaves that were also smoked (then spritzed with bourbon to make them pliable again); creamy with a delicate balance of fresh chevre and smoke. This cheese frequently has blue/brown mold patches, don't be alarmed, either scraped them off with a knife or dig on in!
