Cheesemaker Anne Wigmore’s inspiration for Spenwood was a pecorino cheese she encountered while visiting the island of Sardinia. We think Spenwood is a much gentler sheep milk but by no means mild; fatty and succulent with hints of grass and almonds with a touch of salt and grass and occasionally ta crytalline crunch
