Shelburne Farms is a non-profit education center located on the shores of Lake Champlain on the southern edge of Burlington.
Using the milk of their grass fed Brown Swiss cows to craft award winning cheddar, the smoked version takes the six-month cheddar and smokes it over hickory wood for six hours until it has the perfect balance of bacony smoke and sharp cheddar.
