Caerphilly was originally created to feed protein hungry miners in Wales, but a lack of quality milk means Duckett's is made in Somerset England. Its almost like three cheeses in one; in the center the paste is crumbly and firm with a citrusy tang, between the center and the rind is a somewhat creamier paste that has more milky mushroomy notes and the rind itself is savory and earthy and mushroomy
