Made by Lara and Massimo Libra at San Pietro, aged by Giorgio Cravero in Bra and hand selected just for us. This Parmigiano-Reggiano is the only Parmigiano-Reggiano that bears the "Prodotto di Montagne" which means its made 700m above sea level, the cows eat only forage from the mountains, and is aged at least 24 months. G.Cravero's aging technique allows the temperature to fluctuate in the "vault" which allows the cheese to develop a more nuance expression and maintain a more moist texture. Delicate and sweet with a hint of salt our Parmigiano-Reggiano is amazing when eaten by itself but don't worry, if you're looking to grate or shred it, it it great for that as well!
