The key to this wine is that it’s almost produced like a rose in terms of very minimal skin contact. The technique of cryo-maceration is a bit different however as with this approach the must is essentially frozen using dry ice. Aromas of flowers and fresh fruit are extracted instead of tannin, which is Paolo’s inteded purpose. After 48 hours the wine is removed from the skins, ferments naturally and is moved into stainless steel. It will remain there for a few months before bottling. The wine is unfiltered and bottled by hand.
