The selection of cheese that we carry is always changing. We have found some stalwarts that always seem to find their
way back into the case, but we are always on the lookout for cheeses that will allow us to offer you best variety. Some
weeks we indulge in triple creams; some weeks we go goat-happy. Emeille, our cheese wiz, is constantly tasting us on
samples - as with the wine, it is a group effort to select cheeses for you. These are the sacrifices we are willing to make
for you!
When you are standing in front of the case trying to make a decision on which cheese (or cheeses) please feel free to
ask to try them - that's if whoever is working behind the counter has not already offer you a taste or two. We encourage
you to try them - actually, we insist! And just like wine, we have at least one or two cheeses out to taste every day.
(Disclaimer: there are a couple of cheeses that are only sold as a piece, so you may have to wait until the day we are tasting that out. But please feel free to ask if you have not already been offered.)
